Staphylococcus equorum WS 2733 was isolated from French Raclette cheese, and is the first in the genus Staphylococcus found to produce the antimicrobial peptide (AMP) micrococcin P1. Its antibacterial activity was tested against hundreds of gram-positive and gram-negative bacteria strains. It effected 100% of the Listeria strains, 96% of all other gram-positive strains and 0% of the gram-negative strains. S. equorum is food grade, and in this paper by Carnio et al. its antilisterial activity was tested in a cheese model system, making this bacterial strain and its bacteriocin an intriguing lead into preventing harmful food contamination.
